With the weather getting cooler, I decided to whip up this healthy and delish Turkey Italian Meatball Soup
There is something so comforting about cooking a big pot of soup at the end of a stressful day.
This soup hit the spot and my family gobbled it up.

Italian Turkey Meatball Soup

Ingredients: 1) 1lb ground turkey 2)1 egg 3)1/3c breadcrumbs 4)2 zucchini diced 5) 1 onion diced 6)2 carrots diced 7) 3 cloves garlic diced 8) oregano 9) basil 10) salt 11) 4 cups chicken stock 12) olive oil for frying 13) 4 small potatoes, sliced into small chunks
Directions:
1)Pre-heat stock pot with oil 2) Mix ground turkey, breadcrumbs, egg, salt and ½ diced garlic. 3)Shape turkey mix into small meatballs, size of quarter.
4)Drop into oil and brown both sides. 5) Move meatballs to slowcooker. 6) Add all other ingredients to pan, saute for 5 min, then add to crock pot. 7)Cook on low 6 hrs. 8) Serve with bread, crackers and top with fresh basil and cheese. Enjoy!
